This month’s Featured Retailer is Jocelyn Roche, the uber-talented Bakery Manager behind all the delicious, sweet-smelling fresh bread that is baked fresh every day at COBS Bread! We sat down with Jocelyn and asked her to share some secrets of how to create the perfect grilled cheese sandwich (it sounds ah-may-zing!), the best way to entertain for the summer and how COBS Bread can make your summer BBQ’s the best yet. Also, we found out what a day-to-day looks (and smells like!) in a bakery that believes in providing fresh gourmet breads, scones, croissants and more – and let us tell you – it’s what carb heaven dreams are made of.   • What do you do at COBS Bread and how long have you been doing it for?

I am the store Manager here at COBS Bread.  I have been working for the company for 10 years, and in this particular position for 6 years.

 

  • What do you enjoy most about your job?

I love the customers, I love how happy they are when they first discover we started baking at 1am that morning so they could have fresh from scratch bread.  Our customers are amazing and so loyal.  They all appreciate what we do, and we continue to enjoy doing it for them.  The team we have are all amazing as well, they are all so passionate about what they do, and love to make our customers happy.  Again, our customers are the BEST.

  • Do you have any stand-out favourite pastry/bread/buns? What is your go-to recipe using that?

I have a lot of favourites, but one of them is our sourdough.  Our sourdough is an authentic San Francisco sourdough.  Our mother dough that we feed everyday came from San Francisco years and years ago.  The dough itself takes us 20 hours to make, starting it the day before.  It has a 16 hour bulk fermentation time, and develops the most delicious flavor during this time.  We bake it directly on the stone in the oven, and when it is finished it is beautiful, crusty golden brown, with a dense chewy inside bursting with flavor.   I love to make grilled cheese sandwiches with this loaf.  Pick your favourite cheeses, preferably a couple different varieties for extra flavour, and a couple of add ons, maybe some bacon and fresh garden tomatoes.   Butter it and grill it to  golden perfection, and in the end you have an ‘ooey gooey’ deliciously yummy grilled cheese, bacon and tomato sandwich on a fresh COBS Bread Sourdough.

  • Do you prefer baking or grilling?

Baking!

 

  • What’s your personal philosophy or principles about summer entertaining?

‘Gotta have fresh bread! 😉  I always have to make sure I have our fresh Gourmet Hamburger and Hotdog Buns.  They differ from regular hamburger and hotdog buns because they are made directly from our Challah dough.  Which means they are made with a little bit of egg and a tiny bit of sugar.  This makes them deliciously soft, rich and full of flavor.  They are dynamite for burger and dogs, BUT also make killer pulled pork sandwiches AND amazing breakfast sandwiches too!

 

  • What dish are you most excited about for summer?

I love a a great steak dinner!  But it’s never complete without our Turkish Bread.   Our Turkish Bread is also a bread that takes us 16 hours to make.  Its airy, chewy, soft and full of incredible flavor.  Slice it open, brush it with olive oil, sprinkle it with fresh garlic, herbs, and throw it on the barbeque.   It becomes a delicious side dish to your gorgeous steak and yummy grilled veggies.

Turkish Roasted Pepper & Goat Cheese Sandwich

  • What is your must-have food of all time?

Raspberry White Chocolate scones.  They are my FAV.  They are moist and bursting with fresh raspberries, and white chocolate chunks.  So good fresh out of the oven.

 

  • Do you have any food-related pet peeves?

None that I can think of.

 

  • What recipes are you looking forward to trying this summer?

A grilled salmon sandwich on our 9 grain Cape Seed Loaf.  I haven’t tried that one yet.

 

  • What’s your cooking inspiration?

My mom and grandma.  I’ve been inspired to cook and bake because of all the amazing memories  I have when I was little in the kitchen with them.  They are the true inspiration.

  • Do you prefer savoury or sweet?

Depends on my mood.

 

  • What’s your one piece of advice for creating a to-die for burger?

Gourmet Hamburger buns.  Best bun I’ve ever had in my life.

  • Do you love to entertain indoors or outdoors?

Outdoors absolutely.  We live on lake Simcoe so outdoors all the way.

 

  • What kind of recipes can we expect to see from COBS this year?

We might see a new double chocolate scones, as well as a another Italian style loaf that will take us a period of two days to make.
  • If you had to eat one dish for the rest of your life, what would it be?

A saucy, meaty, cooked to perfection, homemade true Italian lasagna, with our delicious Pane Di Casa on the side.

Something to do with helping people in our community.

 

  • Are you a Chopped Canada or You Gotta Eat Here fan?

LOVE them both!

 

  • What sets COBS apart from other retailers?

We start baking at 1am and everything is baked completely from scratch, we do not add sugar, dairy, or preservatives to our bread.  Everything is donated to local charities at the end of every night.  Newmakert Food Pantry, Salvation Army, and Life Corps, are a few local charities who are currently recipients of are End of Day Giving program.

  • Do you travel a lot for work?

Just to the bakery

 

  • What is the most memorable moment you’ve had working at COBS?

I love this company and what we do for our communities, I don’t think I have one particular memorable moment, because these last 10 years have been amazing, every moment is memorable.

 

  • What is a typical day-in-the-life for you as a Bakery Manager?

My day to day changes all the time, sometimes I could be coming in for 1am to help out with the baking shift, and sometimes I could be working during the day or evening helping out with the sales shifts.  I love every shift, the team is fun,  vibrant, and it’s a high energy atmosphere.  Customers are our number one priority, and without them we recognize, we would not be able to do what we do.  Therefore above anything else I do in my day, I serve customers.  We love our customers.  I bake, clean, admin work, marketing, schedules, (etc) interacting with the staff, and having fun!
